Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu:
Day 4 of Tomato Week- We are half way through Tomato Week and the perfect day to do a salad dish. Tomato Salad is a great refreshing side dish on a hot summer day. This tasty tomato salad is a delicious & fast summer side dish that can be served with almost every meal.

This tasty tomato salad is a delicious & fast summer side dish that can be served with almost every meal.
Ingredients
1 lb Mixed Heirloom Tomatoes, cleaned & chopped
1 Cucumber, cubed
1 Spring Onion, sliced
A Few leaves, Leaf Lettuce
A Few Sprigs or Fresh Basil
1 Tbsp Apple Cider Vinegar
1 Tbsp Table Olive Oil
Salt & Pepper
Instructions
Clean and chop the tomatoes, cucumber, basil and lettuce, then slice the onion.
Mix it all together in a bowl and add the Olive Oil, Salt, Pepper and Apple Cider Vinegar. Serve & Enjoy!
