Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. I love this dish, it is one of my favorites to add to the table. This delicious, cooling yogurt vegetable salad is truly the perfect accompaniment to pretty much every Indian dish. It's a great way to add another serving of vegetables to your meal, and adds a cooling side for any spicy dishes. Here's my recipe:
Carrot & Cucumber Curd Salad

This Raita, Carrot & Cucumber Curd Salad, is a great way to add extra veggies to dinner and it's perfect for cooling off spicy dishes!
Ingredients
1 Cucumber, peeled & chopped
1 Carrot, shredded
1 tsp Mustard Seeds
1 tsp Cumin seeds
1/2 tsp Cumin, ground
1 Cup Yogurt
1/2 Cup Water
Small Bunch Cilantro, chopped
Salt & Pepper to Taste
Instructions
In a bowl mix the chopped veggies, cilantro, yogurt, water and spices. Stir until mixed throughly.
For a more developed flavor chill in fridge before serving. Enjoy!
