Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu:
A few years back, my brothers' Turkish friend stayed with us for a couple of days. He was a wonderful fun & talkative guest who brought us gifts of Turkish Coffee and Sahlep. He was shocked to learn that we had watched the whole Turkish drama "Magnificent Century", loved Lokum aka "Turkish Delight" and we had a great discussion about Turkish & Ottoman cuisine and its influence on European and Indian cuisine. We are hoping to visit him one day.
Thinking back on those memories and seeing beautiful local swordfish at the Farmer's Market, I decided it was a good time to experiment further with the cuisine. This deliciously simple recipe is a perfect introduction to Turkish cuisine and swordfish! The lemon flavor enhances the taste of this fish, along with sweet cherry tomatoes and crunchy bell peppers. Here's my recipe:
Turkish Style Grilled Swordfish Kebabs

This deliciously simple swordfish recipe is perfect for a quick dinner during a hot summer! The lemon flavor enhances the taste of this fish, along with sweet tomatoes and crunchy bell peppers.
Ingredients
1 lb Swordfish, cut into 1" cubes
1 Bell Pepper, cut into 1" cubes
1 cup Cherry Tomatoes
1 Lemon, Cut into slices
1/4 cup Extra Virgin Olive Oil
2 Tbsp Lemon Juice
2 Bay Leaves
1 tsp Lemon Pepper Seasoning
Salt & Pepper to Taste
Instructions
In a bowl combine the olive oil, lemon juice, bay leaves, Lemon pepper, salt & pepper. Add in fish, sliced lemons, bell pepper and tomatoes, and let marinate for at least 30 minutes.
Thread marinated fish onto soaked bamboo skewers, alternating with lemon slices, bell peppers and tomatoes.
Heat up your grill, or preheat your oven to broil High, when you're ready to cook. Cook 5 minutes on each side. Serve with extra lemon on a salad bed. Enjoy!
