Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu:
Working from home due to COVID-19 hasn't diminished 3 o'clock in the afternoon pick-me up chocolate cravings! I was scanning the cupboard this morning looking for something to put together for later and I see the Raw Cacao nibs next to the Chia seeds...a plan is forming...It's been awhile since we've had chia seed pudding!
Bananas contain fiber, potassium, antioxidants, and vitamin C, while Chia seeds are loaded with fiber, calcium, protein, Omega-3s and antioxidants and Raw Cacao flavanols have been shown to help lower blood pressure and cholesterol, while potentially improving cognition. That sounds like a powerhouse heart healthy combo for a 3pm snack!
This Chocolate Chia Pudding is great for those sweet snack cravings, dessert, or breakfast. Dark Chocolate Chia Seed Pudding mixed with raw cacao nibs layered with thinly sliced ripe banana...a perfect mix of healthy decadence.
Here is my recipe:
Banana Chocolate Chia Pudding
Emily (Cooking for Kishore)
Ingredients
1/4 Cup Chia Seeds
1 Cup Almond Milk (Unsweetened)
1 Tbsp Sugar
1 Tbsp Dark Chocolate Powder (Unsweetened)
1 tsp Raw Cacao Nibs (Optional)
1 Banana, sliced
Instructions
Mix seeds, milk, sugar, chocolate powder, and nibs together in a glass jar. Place in refrigerator for 8hrs or overnight.
Remove it from the fridge, and make sure your pudding looks thick and the chia seeds have gelled. Layer a bowl with sliced banana and the pudding, then top with banana and whipped cream, Enjoy immediately.
