Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu:
Since we couldn't have the family over we opted for more snack foods for this year's meal. We had beautiful spinach from the farmer's market and plenty of onions so I decided to do a riff on a snack favorite, Onion Pakora. These green & gold crunchy savory fritters were the perfect addition to this year's Ugadi dinner!
So here is my recipe for Spinach & Onion Pakora:

Ingredients
1 Medium Yellow Onion, thinly sliced
1 cup Fresh Spinach, chopped
1/4 cup Chickpea Flour, Besan
1/4 cup Rice Flour
1 tsp Garlic Ginger Paste
1 tsp Red Chili Powder
1 Green Chili, minced
1/4 tsp Baking Soda
Bunch of Cilantro, chopped
1 tsp Salt
1/2 cup Water
Instructions
Mix both flours, chili powder, salt and baking soda in a bowl.
Add the green chili, garlic ginger paste and enough water to make a thick batter. Add the spinach, cilantro and thinly sliced onion and mix well.
Heat the oil in a frying pan to medium. Once oil is hot, add spoonfuls of batter. Fry till golden brown on both sides. Drain on paper towels before serving. Serve hot with chutney. Enjoy!
