Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Onion Pakora

After a very busy work week, we both decided to have a nice relaxed, lazy Saturday. We were finishing up a movie when 3pm rolled around and it hit...Saturday afternoon snack craving! After looking through the cabinets, I decided to whip up these tasty onion fritters while Kishore picked another movie. These golden savory fritters, have the perfect amount of salt, heat, and crunch to quell your snack craving.

So here is my recipe for Onion Pakora:

Onion Pakora

Ingredients

  • 1 Medium Yellow Onion, thinly sliced
  • 1/4 cup Chickpea Flour, Besan
  • 1/4 cup Rice Flour
  • 1 tsp Garlic Ginger Paste
  • 1 tsp Red Chili Powder
  • 1 Green Chili, minced
  • 1/4 tsp Baking Soda
  • Bunch of Cilantro, chopped
  • 1 tsp Salt
  • 1/2 cup Water

Instructions

  1. Mix both flours, chili powder, salt and baking soda in a bowl.
  2. Add the green chili, garlic ginger paste and enough water to make a thick batter. Add the cilantro and thinly sliced onion and mix well.
  3. Heat the oil in a frying pan to medium. Once oil is hot, add spoonfuls of batter. Fry till golden brown on both sides. Drain on paper towels before serving. Serve hot with chutney. Enjoy!
Yield: Makes 15-20
Prep Time: 10 mins.
Cook time: 10 mins.
Total time: 20 mins.
