Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Beet & Blue Cheese Spinach Salad


I always like to have a fresh crisp salad with my meal, this is especially true in the winter when I'm missing garden fresh produce. But I also like to try to eat what is in season, making this a perfect winter salad because it uses cold weather greens and root veggies. This easy, rich beet salad has a crisp, clean and nutty taste a perfect accompaniment to heavier holiday fare.  Here's my recipe:

Beet & Blue Cheese Spinach Salad

Beet & Blue Cheese Spinach SaladIngredients

  • 2 Cups Baby Spinach
  • 3 Cooked Beets, cubed
  • 1/3 Cup Blue Cheese, crumbled
  • 1/3 Cup Pine Nuts
  • 2 Tblsp Balsamic Vinaigrette

Instructions

  1. Cook the beets with the skin on until fork tender. Allow them to cool, then peel off skin and cube.
  2. Add all your ingredients in a bowl and mix thoroughly. Add a light coating of the Balsamic Vinaigrette and toss before serving.
Yield: 4-6 Servings
Prep Time: 40 mins.
Cook time: 5 mins.
Total time: 45 mins.
