Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Pumpkin Walnut Bread

These weather changes mean one thing in our house, it's officially soup and baking season! On the first truly cold weekend it only seemed right to bake a tasty quick bread including the quintessential Fall favorite, Pumpkin Spice. This soft, slightly sweet, nutty spiced pumpkin loaf encompasses favorite Fall tastes and colors; perfect with a hot cup of tea. 

Here's my recipe:

Pumpkin Walnut Bread

Ingredients

Pumpkin Walnut Bread
  • 3.5 cups Unbleached Flour
  • 2 Cups Sugar
  • 1 tsp Cinnamon, ground
  • 1.5 tsp Pumpkin Spice
  • 1 cup Vegetable Oil
  • 2 tsp Baking Soda
  • 4 Eggs
  • 1 Can Pumpkin Puree
  • 1/2 Cup Walnuts, chopped
  • 2/3 Cup Milk

Instructions

  1. Preheat oven to 350 F. Sift and mix all dry ingredients together
  2. Add all remaining ingredients to the dry mix, and mix well.
  3. Pour into 2 greased loaf pans and bake for 80-90 minutes.
  4. Allow time to cool then cut and enjoy!
Yield: 2 Loaves
Prep Time: 5 mins.
Cook time: 1 hrs. 20 mins.
Total time: 1 hrs. 25 mins.
