Salt Cod Fish Fritters - Bacalaítos


Today was our first real feel of Fall, and as much as I am looking forward to cool crisp air, I'm going to miss the warm sunshiny days. To off set these feelings, I usually try to make dishes that remind us of trips to warmer climates. While both of us grew up eating different kinds of salted fish dishes, my mom use to make Bacalaítos as a cold winter treat. So while we were in Antigua, I was truly excited to try a slightly different version of those fritters with Kishore. Here is my melding of those recipes:

Salt Cod Fish Fritters - Bacalaítos

Ingredients

    Salt Fish Fritters - Bacalaítos
  • 1/2 lb Boneless Salt Cod
  • 1 tsp Garlic, minced
  • 1 Spring Fresh Marjoram, finely chopped
  • 1 Spring Fresh Thyme, finely chopped
  • 1/4 cup Cilantro, chopped
  • 1 small Red Onion, chopped
  • 1 Spring Onion, chopped
  • 1 Tbsp Sriracha Hot Sauce
  • 1 1/4 cups Unbleached Flour
  • 2 tsp Baking Powder
  • 1 Egg
  • 3/4 cup Milk
  • 1/2 cup Water
  • 1/2 tsp Fresh Ground Black Pepper
  • 1/2 tsp Salt
  • Vegetable Oil

Instructions

  1. Prepare the Salt Cod by boiling in water with 3 changes. Cool and flake.
  2. Mix the flour, baking powder, salt and pepper, then add the herbs, onions, garlic, and prepared salt cod. Mix in Egg, Milk, Water and Hot Sauce.
  3. Heat oil in a pan to medium high heat and once hot add approximately 1 Tbsp batter per fritter. Cook until light brown, ~1 minutes, and flip and cook for another ~1 minutes.
  4. Drain on a paper towel and serve.
Yield: 20 Patties
Prep Time: 30 mins.
Cook time: 15 mins.
Total time: 45 mins.
