Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu:

Sweet Chili Lime Chicken Burgers

We just spent an awesome 10 days in Costa Rica. But now I'm back...just in time for better weather and backyard barbecues!

We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's.

This juicy chicken burger has just the right amount of sweet chili lime kick that plays off the herby green onions and cilantro, topped with pickled red onions on a sesame seed bun.

Ingredients

  • 1.5 lbs Ground Chicken Thigh
  • 5 Green Onions, choppped
  • 1 Cup Cilantro, chopped
  • 1 Tbsp Garlic Ginger Paste
  • 1 Tbsp Hoisin Sauce
  • 1/2 Tbsp Soy Sauce
  • 1/2 tsp Red Chili Flakes, crushed
  • 1/2 tsp Fresh Ground Black Pepper
  • 1/4 tsp Salt
  • 1/2 tsp Sesame Oil
  • 1 tsp Lime Zest
  • Juice from 1 Lime
  • 6 Sesame Seed Buns
  • Iceberg Lettuce, shredded
  • Tomato, thinly sliced
  • Pickled Red Onions
  • Mayo with Lime

Instructions

  1. Mix ground meat, green onion, cilantro, garlic ginger paste, hoisin sauce, soy sauce, red chili, lime juice and zest, sesame oil, salt, and pepper in a bowl. Make sure it is incorporated well. Let sit for about 10 minutes. Then divide into 6 and make into patties but don't flatten or squish them. *If the mix is too wet, add about 1/4 cup of panko breadcrumbs until it holds it's shape but not to dry.*
  2. Make sure your skillet or grill is heated and then carefully add the patties, allowing each side to get a nice crisp light brown.
  3. To assemble your burger - spread a little mayo on the lightly toasted sesame seed bun, add the shredded lettuce, tomato, then the burger, then top with pickled red onions.
