Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Easy & Tasty Carrot Cake


I've never been a die hard fan of carrot cake, mostly because the majority of bakeries make dry bricks slathered in the most saccharine sweet, nastiest tasting cream cheese frosting ever. The cake that changed my mind about them was made by one of our neighbors, Jenny. She was a wonderful home baker, our family would often ask her to make cakes for get togethers and celebrations. Fun fact: she's the one who taught me how to crochet and during those lessons she'd always give us a piece of something she was baking! Her carrot cake was always just right; sweet, crunchy perfection. This is my version of her great carrot cake; it's moist with a crunch from walnuts, slightly sweet from the carrots and raisins, and lightly topped with a simple vanilla cream cheese frosting. Here's my recipe::

Easy & Tasty Carrot Cake

An Easy & Tasty Carrot Cake that's moist with a crunch from walnuts, slightly sweet from the carrots and raisins, and lightly topped with a simple vanilla cream cheese frosting..

Ingredients

  • 1 cup Unbleached Flour
  • 1.5 cups Carrots shredded
  • 3/4 cup Vegetable Oil
  • 1/4 cup Milk
  • 1/2 cup Sugar
  • 1/2 cup Walnuts, chopped
  • 1/4 cup Green Raisins
  • 1/4 cup Sultanas
  • 1 tsp Cinnamon
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 2 eggs
  • 1/4 cup Cream Cheese
  • 1/2 cup Powdered Sugar
  • 1 tsp Vegetable Oil
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat Oven to 350F. Wash, peel, and shred Carrots. Butter 8x8 square pan.
  2. Mix eggs, vegetable oil, milk, and sugar. In a separate bowl mix flour cinnamon, baking soda, and salt. Add flour mixture to egg mixture and mix throughly.
  3. Add shredded carrots, walnuts, and raisins; incorporate well. Then pour into prepared dish and bake for 40-45 minutes.
  4. While it's baking prepare cream cheese frosting by mixing cream cheese, vanilla extract, powdered sugar, and 1 tsp of vegetable oil until smooth. Set aside.
  5. Turn cake out onto cooling rack, and let cool fully before icing with cream cheese frosting.
Yield: 9 Servings
Prep Time: 10 mins. Cook time: 45 mins. Total time: 55 mins.
