Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Spicy Sesame Noodles


Growing up one of my favorite dining out dishes was Hot Sesame Noodles. It was a treat that we would get every once in a while after watching a performance at my Dad's school, Laguardia High School for the Performing Arts - NYC.  It was a tradition to go to my parent's favorite small packed Chinese restaurant; start with rose tea and hot & sour soup, then the noodles. My Dad still talks about those Noodles! Unfortunately the restaurant closed leaving us without our noodle fix. It wasn't until almost 11 years later when my friend, Shuang, found a restaurant that made incredible Hot Sesame Noodles. It took me awhile and a few taste tests but I was able to make a version close to the one I remember from my childhood.


Here's my recipe:

Spicy Sesame Noodles

These noodles are spicy, slightly sweet and nutty, topped with crunchy vegetables and sesame seeds. They are great hot or cold, and even better the next day for lunch! *Instead of Chili Chutney, you can use your favorite thick hot sauce and add 1 tsp garlic ginger paste.

Ingredients

  • 1 lb Fresh Chinese Egg Noodles
  • 2 Carrots, julienned
  • 1 Cucumber, julienned
  • 4 Scallions, Thinly sliced
  • 1 Tbsp Toasted Sesame Seeds
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Chinese Rice Vinegar
  • 2 Tbsp Liao's Chili Chutney
  • 1 Tbsp Honey
  • 1 Tbsp Chinese Sesame Paste
  • 1 Tbsp Crunchy Peanut Butter

Instructions

  1. Cook noodles about 5 minutes, till they are cooked through but still chewy. Toss with 1 tsp of Sesame oil and set aside.
  2. In a bowl add Soy Sauce, Sesame Oil, Rice Vinegar, Chili Chutney, Honey, Sesame Paste, and Peanut Butter, mix throughly.
  3. Pour the sauce over the noodles and toss well. Garnish with carrot, cucumber, scallions and sesame seeds.
Yield: 4 Servings
Prep Time: 10 mins.
Cook time: 5 mins.
Total time: 15 mins.
