Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Pomegranate Lemonade

We are officially having a heat wave... Daily temperatures have hit over 90F more than 3 days in a row and while it does mean we've had beautifully sunny weather, it's also been oppressively hot. The danger in this weather is that you become dehydrated so quickly doing the simplest things. This morning watering we were already sweating buckets to the point we put off any other yard work till later! So what better way to stay hydrated and refreshed than some cool, delicious, tartly sweet Pomegranate Lemonade.

This refreshing fruity lemonade is the perfect combination of sweet and tart; great for relaxing and rehydrating on a these hot summer days.

Here is my recipe for Pomegranate Lemonade:
Makes 1L

Ingredients:
1/3 cup Fresh Squeezed Lemon Juice
1 cup Pomegranate Juice, unsweetened
3 cups Ice Water
1/2 cup Sugar
Thinly sliced Lemon for Garnish
Ice

Directions:
1. Combined pomegranate juice, lemon juice, and stir in sugar till it dissolves. Add Ice water and stir well.
2. Serve over ice ice, and top with a slice of lemon.
